Ingredients:

| lbs | Assorted chicken pieces | | 1 1/2
| cup | All-purpose flour | | 2
| | Eggs, beaten | | 1
| cup | Milk | | 1/2
| tsp | Salt | | 1/4
| tsp | Pepper | | 1/2
| cup | Canola oil |

Procedures:
| 1 | Rinse and dry chicken pieces. | | 2 | Sprinkle lightly with a small portion of the flour. | | 3 | Set aside. | | 4 | Mix eggs and milk together. | | 5 | Add the salt and pepper. | | 6 | Dip each piece of chicken in the egg mixture and then into remaining flour, coating well on all sides. | | 7 | Heat the oil in a large skillet; brown the chicken evenly on all sides. | | 8 | Turn the heat down to very low, cover and cook for another 30 minutes, or until the thickest pieces of chicken can be easily pierced with a fork. | | 9 | Serve at once. |
