Sesame chicken fingers

Ingredients:
HONEY-MUSTARD SAUCE
2 tbspMustard, whole grain
6 tbspHoney
CHICKEN FINGERS
1/2 cupSesame seeds
1/4 cupParmesan cheese
1 lbsChicken Breast, skined, boned
Sliced into 2x? strips
2 tbspOlive oil
Red leaf lettuce
Strips orange rind
Procedures:
1No-cholesterol sesame seeds replace traditional batter for these crunchy appetizers.
2Makes abought 20 pieces.
3In a small bowl blend mustard and honey for sauce.
4Set aside.
5In shallow pan combine sesame seeds and parmasan; roll chicken pieces in sesame mixture.
6Heat olive oil in ovenprof heavey-bottomed nonstick skillet or saute pan until just below smoking point.
7Add chicken strips and brown on both sides over medium heat; do not scorch.
8Place chicken strips on cookie sheet and bake in preheated 425* oven 8-10 minutes or until cooked through.
9To serve, line individual plates with lettuce leaqves and arrange chicken strips.
10Or compose a serve yourself platter.
11Garnish with orange rind.
