Ingredients:

| tbsp | Margarine (divided) | | 3
| | Whole Chicken Breasts | | | -skinned and cut into | | | -fillets | | | Freshly Ground Pepper | | | Juice of 1 Lemon | | 3
| tbsp | Parsley, chopped | | 1
| | Lemon, thinly sliced |

Procedures:
| 1 | Heat a 7 inch skillet over medium-high heat. | | 2 | Add oil and 2 tablespoons margarine. | | 3 | Saute" chicken for 2 minutes on each side. | | 4 | Remove to a warm platter and top with a few grounds of fresh pepper. | | 5 | Add lemon juice and 1 to 2 tablespoons of water to skillet. | | 6 | Lower heat to medium. | | 7 | Simmer and scrape bottom of pan to loosen residue. | | 8 | Add parsley and remaining margarine. | | 9 | Stir over low heat just until margarine has melted. | | 10 | Return chicken to pan. | | 11 | Turn once or twice to heat thoroughly. | | 12 | Transfer to serving platter and top with sauce. | | 13 | Garnish with lemon slices. | | 14 | Serves 4 |
