Sauteed chicken breasts with lemon and parsley

Ingredients:
1 tbspOlive Oil
5 tbspMargarine (divided)
3 Whole Chicken Breasts
-skinned and cut into
-fillets
Freshly Ground Pepper
Juice of 1 Lemon
3 tbspParsley, chopped
1 Lemon, thinly sliced
Procedures:
1Heat a 7 inch skillet over medium-high heat.
2Add oil and 2 tablespoons margarine.
3Saute" chicken for 2 minutes on each side.
4Remove to a warm platter and top with a few grounds of fresh pepper.
5Add lemon juice and 1 to 2 tablespoons of water to skillet.
6Lower heat to medium.
7Simmer and scrape bottom of pan to loosen residue.
8Add parsley and remaining margarine.
9Stir over low heat just until margarine has melted.
10Return chicken to pan.
11Turn once or twice to heat thoroughly.
12Transfer to serving platter and top with sauce.
13Garnish with lemon slices.
14Serves 4
