1/2 cupFresh mushrooms, chopped
2 tbspButter
2 tbspFlour
1/2 cupLight cream or half & half
Ds Pepper
1/4 tspSalt
1 1/4 cupSharp cheddar cheese, shred
2 Chicken breasts, boned/halvd
1 Egg, slightly beaten
Bread crumbs
Procedures:
1Saute mushrooms in butter for 5 mins.
2Blend in flour, then light cream, pepper, and salt.
3Cook and stir until thickened.
4Remove from heat.
5Add cheddar cheese gradually.
6Turn mixture into a 9" pan and chill thoroughly.
7Shape cheese mixture into 4 sticks.
8Roll chicken breasts around the sticks and secure with toothpicks.
9Dip breasts into flour, then egg, and coat with bread crumbs.
10Bake at 325°F for 1 hour.
11Remove toothpicks before serving.
