Rob weller's healthy chicken fajitas

Ingredients:
CHICKEN FILLING
1 largePlump chicken breast
1/2 cupCelery (tops and tender
-inside stalks)
1/2 medWhite onion
2 Or 3 peppercorns
2 tbspOlive oil
1 Red pepper
1 Yellow pepper
1 1/2 largeRed onions
1/2 cupChopped cilantro leaves
Salt to taste
Pepper to taste
BEAN FILLING
1 lbsBag of pinto beans (red or
-pink)
8 cupWater
Salt to taste
1/4 Onion
1/4 cupOlive oil
Procedures:
1Poach chicken with celery tops, onions and peppercorns.
2Cook for about 15 minutes.
3Let cool and remove skin.
4When chicken is skinned, slice or shred, then saute with olive oil in wok or large skillet until barely browned around the edges.
5Next add red and yellow peppers and red onions.
6Toss and saute for about 10 minutes.
7Watch closely so that peppers don"t go limp.
8Add cilantro leaves.
9Remove from heat.
10Add salt and pepper to taste.
11Combine with beans (see below).
12Place in tortillas, top with salsa and serve.
13Cook beans in water for approximately 1 ?hours on medium heat.
14Make sure that beans are completely covered in water.
15Stir occasionally.
16Beans will absorb liquid and become soft.
17Add more water if needed.
18Add salt when beans are thoroughly cooked.
19Remove from heat.
20Add chopped onion.
21(onions will cook from the heat of the beans).
22Drizzle with olive oil.
23Let sit.
24Tortillas: warm six large flour tortillas in microwave on high (in large zip lock bag to preserve moisture) for about 30 seconds.
25Salsa: two large, peeled and chopped tomatoes.
26Serves 4
