Quick and easy tarragon chicken

Ingredients:
2 tbspButter or margarine
1 tbspVegetable oil
4 Chicken breasts halves
-skinned and boned
3/4 cupDry white wine or vermouth
2 tspDijon mustard
1 tbspChopped fresh tarragon
-or 1 tsp dried
1/2 tspSalt
Freshly ground pepper
3/4 cupHeavy cream
Procedures:
1In a large frying pan, melt butter in oil over medium-high heat.
2Add chicken breasts and cook, turning once, until lightly browned, about 4 minutes a side.
3Remove and set aside.
4Add wine to the pan.
5Bring to a boil, scraping up bornbits from bottom of pan with a wooden spoon.
6Stir in mustard, tarragon, salt and pepper to taste.
7Whisk in cream and boil until mixture thickens slightly, about 3 minutes.
8Return chicken to pan; turn in sauces to coat and simmer 7-?minutes until chicken is tender.
9Remove chicken to a serving platter, spoon sauce over it.
