Popeye's fried chicken

Ingredients:
3 cupSelf-rising flour
1 cupCornstarch
3 tbspSeasoned salt
2 tbspPaprika
1 tspBaking soda
1 packItalian Salad Dressing Mix
-Powder
1 1/2 ozPk Onion Soup Mix
1/2 ozPk spaghetti sauce mix
3 tbspSugar
3 cupCorn flakes, crush slightly
2 Eggs, well beeaten
1/4 cupCold water
4 lbsChicken, cut up
Procedures:
1Combine first 9 ingredients in large bowl.
2Put the cornflakes into another bowl.
3Put eggs and water in a 3rd bowl.
4Put enough corn oil into a heavy roomy skillet to fill it 1" deep.
5Get it hot! grease a 9x12x2 baking pan.
6Set it aside.
7Preheat oven to 350°F.
8Dip chicken pieces 1 piece at a time as follows: 1-into dry coating mix.
92-into egg and water mix.
103-into corn flakes.
114-briskly but briefly back into dry mix.
125-drop into hot oil, skin-side-down and brown 3 to 4 minutes on medium high.
13Turn and brown other side of each piece.
14Don"t crowd pieces during frying.
15Place in prepared pan in single layer, skin-side-up.
16Seal in foil, on 3 sides only, leaving 1 side loose fro steam to escape.
17Bake at 350°F for 35-40 minutes removing foil then to test tenderness of chicken.
18Allow to bake uncovered 5 minutes longer to crisp the coating.
19Serves Leftovers refrigerate well up to 4 days.
20Do not freeze these leftovers.
21Leftover coating mix (1st 9 ingredients) can be stored at room temp in covered container up to 2 months.
