| tbsp | Olive oil | | 1
| cl | Garlic, chopped | | 2
| | Celery stalks, finely chop'd | | 1/2
| | Lemon, juice of | | 1 1/4
| cup | Dry white wine | | | Salt | | | Pepper | | 1/4
| cup | Flour, seasoned with salt & | | | -pepper | | 1
| med | Onion, finely chopped | | 2
| med | Carrots, grated | | 1
| slice | Ham, chopped | | 1/2
| lbs | Mushrooms, sliced | | 1
| cup | Chicken stock | | 1/2
| tsp | Rosemary |

Procedures:
| 1 | Dust chicken pieces well with seasoned flour. | | 2 | Heat the butter and oil in a lg. | | 3 | Pan. | | 4 | Add chicken and fry until brown and crisp all over. | | 5 | Remove to a plate. | | 6 | Add onion, garlic, carrots, celery, and ham. | | 7 | Saute over low heat until soft (do not brown). | | 8 | Add lemon juice, mushrooms, wine, chicken stock, salt, pepper, and rosemary. | | 9 | Bring to a high simmer. | | 10 | Add browned chicken, lower heat, and cover the pan. | | 11 | Simmer very gently for 45 mins. | | 12 | Or until the chicken is fork tender. |
