4 lbsRoasting chicken, cut up in-
-to serving pieces
1/4 cupButter
2 tbspOlive oil
1 clGarlic, chopped
2 Celery stalks, finely chop'd
1/2 Lemon, juice of
1 1/4 cupDry white wine
Salt
Pepper
1/4 cupFlour, seasoned with salt &
-pepper
1 medOnion, finely chopped
2 medCarrots, grated
1 sliceHam, chopped
1/2 lbsMushrooms, sliced
1 cupChicken stock
1/2 tspRosemary
Procedures:
1Dust chicken pieces well with seasoned flour.
2Heat the butter and oil in a lg.
3Pan.
4Add chicken and fry until brown and crisp all over.
5Remove to a plate.
6Add onion, garlic, carrots, celery, and ham.
7Saute over low heat until soft (do not brown).
8Add lemon juice, mushrooms, wine, chicken stock, salt, pepper, and rosemary.
9Bring to a high simmer.
10Add browned chicken, lower heat, and cover the pan.
11Simmer very gently for 45 mins.
12Or until the chicken is fork tender.
