Ingredients:
3 eachChickens, cut up
Water to cover
1 eachLoaf bread, crust removed
1 canEvaporated milk
2 tbspAji chile powder, or
-substitute New Mexican
1 eachOnion, minced
1 tspCumin
1/2 tspCoriander
Freshly ground black pepper
1 cupGrated Parmesan cheese
1/2 cupWalnuts, peeled and finely
-ground
4 eachHard-boiled eggs, sliced
Procedures:
1Cook the chickens in boiling water until tenbder, about 25 minutes.
2Shred the chicken and set aside.
3Soak the crustless bread in the milk in a separate container.
4Add the chile powder and mix.
5Place the onion in a skillet with the oil and saute.
6When the oil comes to a boil, add the salt, cumin, coriander, and pepper to taste.
7Cok the mixture for a while, then add the soaked bread, mashed smooth.
8Next add the shredded chicken and the grated cheese.
9Simmer for 20 minutes, covered, checking to see that the mixture does not burn.
10Then add the walnuts, stirring to blend them in. serve hot, garnished with hard-boiled eggs
