Pecan crusted chicken (tdrh33b) 1i04

Ingredients:
6 eachChicken breast halves-boned
1 xSalt and pepper
1 eachButter or margarine
3 tbspDijon mustard
8 ozPecans-chopped fine
4 tbspButter or margarine
1 tbspOil
2/3 cupSour cream
1 tbspDijon
Procedures:
1Toast whole pecans in pre-heated 350 deg oven.
2Flatten chicken breasts, season with salt and pepper.
3Melt butter and whisk in the 3t dijon.
4Dip each piece of chicken in the butter mix.
5Coat with pecans.
6Melt 3 t of the butter and the oil in skillet over medium heat.
7Saute half of the chicken breasts until lightly brown.
8Repeat with the rest.
9Transfer to a baking dish and bake 15-20 minutes.
10Melt remaining butter in saucepan, add sour cream, remaining dijon, salt and pepper.
11Whisk together and remove from heat.
12Check seasonings.
13Place a spoonful on each piece of chicken and garnish with the whole pecans.
