Ingredients:
4 tbspSoy sauce
2 tbspSesame oil, * see note
1 tbspCornstarch
2 Boneless skinless chicken
-breast halves
8 ozVermicelli, uncooked
1 tbspSugar
2 tbspDistilled vinegar
2 tbspVegetable oil
1 medCarrot, julienned
1/4 lbsSnow peas, fresh
1/2 cupGreen onions, chopped
1 tbspGinger root, minced
1/2 tspCrushed red pepper
Procedures:
1* use oriental sesame oil.
2Marinade: blend 1 tablespoon soy sauce and 1 tablespoon sesame oil with the cornstarch.
3Stir in chicken.
4Let stand for 10 minutes.
5Noodles: break vermicelli in half.
6Cook according to package directions, omitting salt.
7Drain.
8Keep warm in large mixing bowl.
9Vinegar sauce: dissolve sugar in remaining soy sauce, sesame oil and vinegar.
10Set aside.
11Stir-fry chicken and vegetables: in hot wok or large skillet, heat 1 tablespoon vegetable oil over high heat.
12Add chicken.
13Stir-fry for 3 minutes.
14Remove.
15Heat remaining oil in pan.

18Add green onions, ginger root and red pepper.
19Stir-fry 1 minute longer.
20Remove from heat.
21Stir in chicken and vinegar sauce.
22Pour over vermicelli.
