Ingredients:
4 tbspSoy sauce, divided
2 tbspSesame oil, divided
1 tbspCornstarch
2 Boneless, skinless chicken
Breast halves, cut into
Thin strips.
8 ozUncooked vermicelli
1 tbspSugar
2 tbspDistilled white vinegar
2 tbspVegetable oil, divided
1 medCarrot, julienned
1/4 lbsFresh snow peas, trimmed
And julienned
1/2 cupChopped green onions and
Tops
1 tbspMinced fresh ginger root
3/4 tspCrushed red pepper
Procedures:
1Blend 1 tbsp each soy sauce and sesame oil with cornstarch; stir in chicken.
2Let stand 10 minutes.
3Break vermicelli in half and cook according to package directions, omitting salt; drain and keep warm in large mixing bowl.
4Dissolve sugar in remaining soy sauce, sesame oil and vinegar; set aside.
5Heat 1 tbsp vegetable oil in hot wok or large skillet over high heat.
6Add chicken and stir fry 3 minutes, remove.
7Heat remaining vegetable oil in same pan.
8Add carrot and snow peas;stir fry 1 minutes.
9Add remaining 3 ingredients and stir fry 1 minutes longer.
10Remove from heat; stir in chicken and venegar mixture.
11Pour over vermicelli and toss together to combine.
12Serve immediately.
