Ingredients:
8 ozTomato fettuccine
2 tbspOlive oil , divided
4 cupGarlic , minced
1 lbsChicken , boneless, skinles
1/2 cupWhite wine
2 tbspDijon
2 tbspCapers
1/2 tspPepper
1/4 lbsCherry tomato , cut in half
2 eachBell pepper, (green or yell
1 xParsley , sprig for garnis
Procedures:
1Cook fettuccine according to package directions.
2In large skillet, heat >>>>1 tbsp. oil over high heat.
3Add garlic, cook 1 min. until very lightly browned.
4Add chicken, cook, stirring 2-3 minutes until almost cooked through.
5Add wine, bring to a boil & cook 2 min. stir in mustard, capers & pepper.
6Cook until just heated through; cover & keep warm.
7Drain pasta.
8In same saucepan, heat re- maining 1 tbsp. oil over high heat.
9Add tomatoes & peppers; cook, stirring 3-4 minutes until tender-crisp.
10Return pasta to pot & toss well.
11To serve, place fettuccine mixture on large platter.
12Spoon chicken mixture on top.
13Garnish.
