| lbs | Mushrooms, chopped fine | | 1/2
| tsp | Salt | | 1/4
| tsp | Freshly ground pepper | | 1/4
| tsp | Nutmeg, optional | | 8
| | Chicken breast halves, pound | | 1 1/2
| cup | Fresh bread crumbs | | 1/2
| cup | Heavy cream | | 1/2
| cup | Chicken broth |

Procedures:
| 1 | Recipe by: fannie farmer cookbook preheat oven to 350 °F. | | 2 | Melt 4 tablespoons of the butter in a skillet. | | 3 | Add the mushrooms, salt and pepper, and cook, stirring often, until the mushrooms turn very dark and absorb all the butter. | | 4 | Remove from the heat and stir in ?cup of the bread crumbs and the nutmeg. | | 5 | Divide the mushroom stuffing into 8 portions and place a portion in the center of each piece of chicken. | | 6 | Fold the chicken around the stuffing, and place, seam side down, in a buttered shallow baking dish. | | 7 | Melt the remaining tablespoon of butter and brush over the chicken. | | 8 | Sprinkle with the remaining ?cup of bread crumbs. | | 9 | Pour on cream and broth. | | 10 | Bake for 30 minutes, until lightly brown. |
