Moroccan style chicken tagine

Ingredients:
4 Chicken legs, skin removed
1/2 cupChopped fresh parsley
4 Cloves garlic, minced
1/4 tspSaffron threads, crumbled
4 Carrots, peeled/in 2" pieces 14 ?oz Can chopped tomatoes
4 Stalks celery, in 2" pieces
2 Cinnamon sticks
13 1/4 ozCan chicken broth
1 tbspLemon juice
1/2 tspGround cardamom
1/8 tspPepper
-drained
Procedures:
1In large saucepot, combine all ingredients except for tomatoes.
2Bring to a boil, stirring, over medium-high heat.
3Reduce heat to low; cover and simmer for 20 minutes, stirring and making sure chicken is covered with liquid.
4Add tomatoes; cook, covered, 15-20 minutes or until chicken is cooked through and vegetables are tender.
5Garnish with lemon slices.
6Per serving: 232 calories, 6 g.

9Not too spicy for the kids and a great taste change.
