Ingredients:
-Black Family Dinner Quilt
CHICKEN MIXTURE
1 cupCarrots, thinly sliced
1 cupRed potato, peeled and cubed
1/2 cupOnion, chopped
1/2 cupCelery, sliced
1/4 tspSalt
1 cupCanned condensed chick.broth
1 1/4 lbsBoneless, skinless, chicken
-breast halves
2 tbspFlour
1/2 cupWater
DUMPLINGS
1 cupFlour
2 tspDried parsley flakes
1 tspBaking powder
1/2 tspDried thyme
1/4 tspSalt
1/3 cupPlus 1 tbsp buttermilk
2 tbspOil
Procedures:
1Combine carrots, potato, onion, celery, and salt in 2-qt.
2Round casserole or baking dish.
3Pour broth over top.
4Arrange chicken on vegetables with thickest part towards outside of dish.
5Cover w/waxed paper.
6Mirowave on high 12 mins.
7Or until chicken is tender.
8Rotate dish half turn every 4 mins.
9Turn chicken over.
10Microwave 2 mins.
11Remove chicken.
12Cover vegetables.
13Microwave on full power 3 mins.
14Combine 2 tbsp flour and water.
15Stir into vegetables.
16Cover.
17Microwave on high 4 mins., stirring after 2 mins.
18Chop chicken; stir into vegetables.
19Dumplings - combine flour, parsley, baking powder, thyme, and salt.
20Add buttermilk and oil all at once.
21Stir w/fork, just until dough forms.
22Drop from spoon into 6 mounds around edge of chicken/vegetable mixture.
23Cover.
24Microwave at high 4 mins., rotating dish half turn after 2 mins.
25Let stand, covered, 5 mins.
