Lemon pineapple chicken, peking style

Ingredients:
2 each8 oz boned, skinless
-chicken breasts
2 tbspChicken bouillon
1 tbspSoy sauce
1 Garlic clove, crushed
3/4 tbspSalt
2 tbspCornstarch
2 tbspLemon juice
1/4 cupPlus
1 tbspCider or rice vinegar
1 cupCanned pineapple chunks
-no sugar added
1/2 cupGrated carrot
1 medGreen pepper, cut into
1 ? squares
1 tbspGrated lemon rind
1 cupShredded lettuce
Procedures:
1Preheat broiler.
2Wash chicken and wipe dry.
3Combine bouillon, soy sauce, garlic and salt in a shallow dish.
4Place chicken in marinade and spread with fingers.
5Let stand 15 minutes, turning occasionally so that entire surface of chicken gets coated.
6Broil on rack 4 inches from heat, turning once until done on both sides.
7While chicken is broiling, prepare the sauce: stir cornstarch into lemon juice; combine with water and vinegar in a saucepan.
8Add pineapple, carrot, green pepper and lemon rind.
9Bring to a boil.
10Lower heat and simmer until thickened.
11When chicken is broiled, place on two individual serving plates.
12Pour lemon-pineapple sauce over chicken.
13Serve immediately with a border of shredded lettuce
