Ingredients:

1 medPineapple
1 cupBarley
1 Cinnamon stick
4 Whole cloves
3 1/2 cupBrown sugar, packed
-Water
Procedures:
1This will take 4 days to prepare.
2Pare pineapple; reserve peel.
3Chop pineapple and the core.
4Place pineapple, core, and peel in lg.
5Glass crock or bowl.
6Add 6 cups of water.
7Let this mixture stand 48 hours.
8Heat 6 cups of water, barley, cinnamon, and cloves to boiling; reduce heat.
9Cover and cook until barley is tender; about 1 hr.
10Drain well and rinse under running cold water.
11Stir barley, brown sugar, and 2 cups water into pineapple mixture.
12Let stand 48 hours.
13Strain through cheesecloth and refrigerate until cold.
14Serve over ice, if desired
