Ingredients:

| cup | Fresh lemon juice | | 1
| lbs | Frying chicken, quartered | | | -or 3-lbs. breasts | | 2
| tsp | Salt | | 1/2
| cup | All-purpose flour | | 1
| | Egg, lightly beaten | | 1 1/2
| cup | Dry fine bread crumbs | | | Vegetable oil | | | Lemon wedges |

Procedures:
| 1 | Sprinkle lemon juice over chicken and turn until thoroughly moistened. | | 2 | Let stand 1 ?hours, turning pieces occasionally. | | 3 | Pat chicken dry with paper towels. | | 4 | Sprinkle with salt; dip in flour and shake off excess. | | 5 | Dip in egg; roll in bread crumbs to coat thoroughly. | | 6 | In a heavy skillet, heat oil (should be ?inch deep at all times during frying). | | 7 | Add one-half of chicken pieces and when deep golden brown, turn and complete frying. | | 8 | Test for doneness. | | 9 | Remove to platter and keep warm. | | 10 | Fry remaining chicken. | | 11 | Serve garnished with lemon wedges. | | 12 | Makes 6 servings |
