Ingredients:
2 1/2 lbsFryer -- cut up
5 tbspShortening
1/2 tspPoultry Seasoning
1 tspSalt
1/2 tspPepper
1 largeOnion -- finely chopped
3 tbspButter
2 tbspTomato Sauce
2 cupWalnuts -- finely chopped
3 1/2 cupWater
1 tspSalt
1/2 tspCinnamon
2 tbspLemon Juice
1 cupFresh Pomegranate Juice
1 tbspSugar
Procedures:
1Here"s a recipe from "in a persian kitchen" by maideh mazda.
2I haven"t tried this recipe before, but all the recipes i"ve tried from this book have been great.
3Wash and prepare chicken for frying.
4Saute the chicken in the shortening along with the poultry seasoning, salt, and pepper.
5Set aside.
6Saute onion in butter until golden brown.
7Add tomato sauce and simmer for a few minutes.
8Add the walnuts.
9Simmer over med. heat for 5 minutes.
10Stir constantly and be careful not to burn walnuts.
11Add water and remaining seasonings, lemon juice and pomegranite juice.
12Cover and cook the sauce on low heat for about 35 minutes.
13Arrange chicken in sauce.
14Cover and simmer for 20-25 minutes.
15Serve with steamed rice.
