Ingredients:
-Sue Woodward
6 Boneless split chicken
-breasts
Salt
Pepper
1 pack10-oz. frozen chop'd spinach
-thawed
8 ozFeta cheese, crumbled
1/2 cupMayonnaise
1 clGarlic, minced
1/4 cupFlour
1/2 tspPaprika
12 sliceBacon
Procedures:
1Preheat oven to 325°F.
2Cut a pocket into each chicken breast.
3Salt and pepper to taste, set aside.
4Thoroughly drain and squeeze any liquid from thawed spinach.
5Do not cook.
6Combine with feta cheese, mayonnaise, and garlic; stuff into chicken breast pockets.
7Combine flour and paprika and lightly coat stuffed chicken breasts.
8Wrap two slices of bacon around each and place on a baking rack in baking dish.
9Bake uncovered at 325°F for 1 hr.
10Or until chicken tests done.
11Note - may be prepared ahead.
12Cover well; refrigerate or freeze and bake later.
13If frozen, thaw in frig before baking.
