| tbsp | Brown sugar | | 1/4
| cup | Tomato paste | | 2
| tsp | Salt | | 1/2
| tsp | White pepper | | 1
| tsp | Dried oregano | | 1/2
| tsp | Ground fennel | | 2
| | Bay leaves |

Procedures:
| 1 | In pressure cooker, heat oil. | | 2 | Add onion and garlic and saute in hot oil over med-high heat 2 mins. | | 3 | Add chicken pieces and cook 2 mins., stirring occasionally. | | 4 | Stir in broth, rice, brown sugar, tomato paste, salt, pepper, oregano, fennel, and bay leaves. | | 5 | Secure lid. | | 6 | Over high heat, develop steam to high pressure. | | 7 | Insert a heat diffuser between pan and heat. | | 8 | Reduce heat to maintain pressure and cook 9 mins. | | 9 | Release pressure accdg. | | 10 | To manufacturer"s directions. | | 11 | Remove lid. | | 12 | Shake chicken and rice mixture well and stir to distribute cooking liquid. | | 13 | Discard bay leaves |
