| 1 | Marinade: 1 clove garlic, crushed 1 tsp fresh root ginger, grated ?level tsp caster sugar 1 tbsp soy sauce few drops sesame oil rice: 3 tbsp oil, preferable sesame 2 oz button mushrooms, sliced ?red pepper, de-seeded and diced 4oz bean sprouts 2 oz peas 4oz long grain rice, cooked until just tender 2 tbsp soy sauce 2 level tsp cornflour oil for frying spring onions, to garnish wash and drain the chicken livers. | | 2 | Dry on kitchen paper and trim into 1 inch pieces. | | 3 | Mix the marinade ingredients and add the livers. | | 4 | Leave to stand for 15 minutes. | | 5 | Heat the oil in a frying pan or wok. | | 6 | Add the mushrooms, pepper and beansprouts and cook for 2-3 minutes, until the mushrooms are tender. | | 7 | Add peas, rice and soy sauce, and cook for a further 2 minutes. | | 8 | Keep warm. | | 9 | Toss livers in cornflour and fry over a high heat for 5 minutes, stirring. | | 10 | Thread on wooden cocktail sticks and serve with rice. | | 11 | Garnish with spring onion. |
