Ingredients:

| | Whole medium chicken | | | -breasts(about 1 ?/td> | | | -lbs.)skinned, boned | | | And halve lengthwise | | 2
| tbsp | Margarine or butter | | 1
| | 16 oz can peach slices | | 1
| tbsp | Cornstarch | | 1
| tsp | Grated gingerroot | | 1
| | 8 oz can sliced water | | | -chestnuts, drained |

Procedures:
| 1 | Rinse chicken; pat dry. | | 2 | In a 10" skillet, cook in hot margarine over medium heat, about 10 minutes or until tender enough to be easily pierced with a fork, turning once. | | 3 | Remove from skillet; cover to keep warm. | | 4 | Drain peaches, reserving syrup. | | 5 | Add water to reserved syrup to make ?cup total; stir in cornstarch and gingerroot. | | 6 | Add to skillet. | | 7 | Cook and stir until thickened and bubbly. | | 8 | Add peaches and water chestnuts; heat through. | | 9 | Season to taste with salt and pepper. | | 10 | Spoon over chicken. | | 11 | Makes 4 servings. |
