Ingredients:
2 tbspPeanut oil
2 eachCloves garlic, diced very
-fine
1 eachSlice fresh ginger, cut
-very thin julienne
3/4 lbsLarge scallops, cut in
-half through the middle
1 cupGarlic chives, cut into
-? pieces
SAUCE
1 tspRice wine
1/2 tspSalt
2 tbspDry sherry
1/4 tspGround white pepper
1/4 cupChicken stock
1 tbspCornstarch mixed with
1 tbspWater
Procedures:
1Cut the scallops & chives and mix the sauce before you do anything else.
2You must not overcook this dish.
3Heat a wok and add the oil.
4Chow the garlic and ginger for just a moment and then add the scallops.
5Chow for 2 minutes or so and add the chives.
6Stir the sauce and then add it to the wok.
7Stir-fry until all is thick and hot.
