Ingredients:

| each | Slice fresh ginger, cut | | | -very thin julienne | | 3/4
| lbs | Large scallops, cut in | | | -half through the middle | | 1
| cup | Garlic chives, cut into | | | -? pieces | | | SAUCE | | 1
| tsp | Rice wine | | 1/2
| tsp | Salt | | 2
| tbsp | Dry sherry | | 1/4
| tsp | Ground white pepper | | 1/4
| cup | Chicken stock | | 1
| tbsp | Cornstarch mixed with | | 1
| tbsp | Water |

Procedures:
| 1 | Cut the scallops & chives and mix the sauce before you do anything else. | | 2 | You must not overcook this dish. | | 3 | Heat a wok and add the oil. | | 4 | Chow the garlic and ginger for just a moment and then add the scallops. | | 5 | Chow for 2 minutes or so and add the chives. | | 6 | Stir the sauce and then add it to the wok. | | 7 | Stir-fry until all is thick and hot. |
