Ingredients:
8 ozTomato sauce
1/4 cupPaprika
1/4 cupDry red wine
1 tbspGinger root, grated
1 tspRed pepper
1/8 tspCardamom, ground
1/8 tspNutmeg, ground
1/8 tspClove, ground
1/8 tspCinnamon, ground
1/8 tspAllspice, ground
2 Medium onions, chopped
2 Garlic cloves, minced
2 tbspCooking oil
1/2 tspGround turmeric
3 lbsBroiler chicken, cut up
1/4 cupDry red wine
Procedures:
1Preparation time: 1:00 Make the red pepper sauce first, combine tomatoe sauce,paprika,?cup red wine , grated giner root , red pepper , cardomom , nutmeg, cloves, cinnamon , and allspice.
2Set redpepper sauce aside
3In a large skillet cook onion and garlic in hot oil till onion is tende but not brown .
4Stir in red pepper sauce,tumeric, and 1 teaspoon of salt.
5Add chicken pieces to skillet.
6Spoon onoin mixture over chicken pieces, bring mixture to boiling; reduce heat .
7Cover ; simmer about 30 minutes.
8Stir in ?cup dry red wine.
9Cook uncovered , about 15 min.; turn chicken pieces often .
10Skim off fat .
11Serve with ethiopian flat bread.
