Ingredients:

| lbs | Can Italian tomatoes | | | -drained (reserve juice) | | 9
| oz | Package frozen okra | | 1
| large | Green pepper, chopped | | | Reserved tomato juice | | | Chicken broth | | 1
| cup | Smooth peanut butter | | | -(preferably "natural" | | | -style) | | 2
| tsp | Brown sugar | | 1/4
| tsp | Fenugreek or cumin | | 1/2
| cup | Peanuts, coarsely chopped |

Procedures:
| 1 | Servings: 6 preparation: in casserole, heat butter and oil and brown chicken, season with salt & pepper if desired. | | 2 | Remove. | | 3 | Add onions to fat in casserole and cook until translucent. | | 4 | Add vegetables to onion, stirring to blend mixture. | | 5 | Replace chicken. | | 6 | To reserved tomato juice, add chicken broth to make 1 ?cups; add peanut butter and stir over low heat until mixture is smooth. | | 7 | Add seasonings, stir to blend mixture, and pour over chicken. | | 8 | Bake, covered, at 350 °F for 1 hour, or until chicken is tender. | | 9 | Garnish with chopped peanuts and serve. | | 10 | Serve with: rice mixed green salad |
