Rice sticks with vegetables

Ingredients:
3 quartWater
1 packRice sticks (13 ?oz)
2 Stalks celery
4 ozChinese pea pods
1 ozOriental dried mushrooms *
1/4 cupOil
1 lbsBean sprouts
1 tbspCurry powder
1 cupChicken broth
Salt
Soy sauce
Procedures:
1*note: mushrooms should be softened in water.
2Bring water to boil and add rice sticks.
3Cook 2 minutes, then drain.
4Rinse with cold water and drain.
5Cut celery, pea pods and mushrooms into thin slices.
6Heat oil until hot and add rice sticks.
7Cook, stirring, until brown.
8Remove rice sticks from pan and drain.
9Add celery, pea pods, mushrooms and bean sprouts and cook over high heat 2 minutes, stirring constantly.
10Combine curry powder and chicken broth and add to pan.
11Season to taste with salt.
12Pour over rice sticks and toss to serve.
13Serve with soy sauce.
14Makes 6 to 8 servings
