Ingredients:
4 cupButter, divided
1 lbsApple, tart, peeled, cored
1 cupCashews, coarsely chopped
1 tbspSugar
3 cupHard cider
1 Chicken, cut up
Procedures:
1Saut# chicken lightly in ?cup of the butter.
2Place apples in a buttered shallow baking dish; top with chicken and sprinkle with nuts and sugar.
3Add cider; dot with remaining butter.
4Cover.
5Bake in preheated moderate oven (375°F).
6Until tender, about 45 minutes.
7Makes 4 to 6 servings.
