Chicken pumpkin chili

Ingredients:
2 tbspOlive oil
2 cupOnion -- chopped
2 cupRed bell pepper -- chopped
3 tbspJalapeno -- minced
1 Clove garlic -- minced
1 cupBeer
1 cupChicken broth
1/4 cupRipe olives -- sliced
3 tbspChili powder
1 tspGround coriander
1/2 tspSalt
29 ozCanned tomatoes with their
Juice -- chopped
1 lbsBoneless, skinless chicken
Breasts -- cubed
2 cupCooked pumpkin or butternut
Squash -- peeled, cubed
2 tbspCilantro -- chopped
1 tbspCocoa powder
16 ozCanned pinto beans --
Drained
6 tbspScallions -- sliced
1 1/2 ozCheddar cheese -- shredded
6 tbspSour cream
Procedures:
1Heat the oil in a dutch oven over medium heat.
2Suate the onions until lightly browned - -about 8 minutes.
3add the bell pepper, jalapeno and garlic.
4Saute for 5 minutes more.
5add the beer, broth, olives, chili powder, coriander, salt, tomatoes and chicken.
6Bring the mixture to a boil, reduce the heat, cover partially and simmer for 15 minutes.
7stir in the pumpkin, cilantro, cocoa and beans.
8Cook for 5 minutes.
9serve in individual bowls, topped with the cheese, sour cream and scallions.
