Ingredients:
POPOVERS
1 cupSifted flour
1/4 tspSalt
3/4 cupMilk
1/4 cupCold chicken broth
2 Eggs
FILLING
4 tbspButter
1/3 cupFlour
1/4 tspGround thyme
1/8 tspFreshly ground pepper
1 cupChicken broth
1 cupEvaporated milk
2 tbspWhite wine
1/2 lbsMushrooms, quartered and
-sauted in 2 T butter until
-lightly browned
1 cupFrozen peas, thawed
1/4 cupRed bell pepper, chopped or
1/4 cup-pimientos
3 cupChopped cooked chicken
Procedures:
1Make popovers.
2Preheat oven to 450.
3In a blender or food processor, combine flour, salt, milk, broth, and eggs.
4Process until smooth.
5Spoon into well-greased preheated popover pan or muffin tin, filling two-thirds full.
6Bake 40 minutes, until well browned, puffed, and firm.
7Make filling.
8Meanwhile, melt butter in a large saucepan over medium-low heat.
9Whisk in flour, thyme, and pepper.
10Cook, stirring, 1 to 2 minutes without browning.
11Gradually whisk in chicken broth, milk, and wine.
12Cook, stirring until thickened, about 5 minutes.
13Add mushrooms, peas, red pepper, and chicken.
14Cook another 5 minutes until heated through.
15Split hot popovers and spoon in chicken filling
