Apple sausage pancakes with cider syrup

Ingredients:
1 Egg
1 cupPancake mix
2/3 cupMilk
2 tbspOil
1/2 tspCinnamon
1/2 cupFresh apple, shredded
1/2 lbsBulk pork sausage, browned
- and drained
CIDER SYRUP
1/2 cupSugar
1 tbspCornstarch
1/8 tspPumpkin pie spice
1 cupApple cider
1 tbspLemon juice
2 tbspMargarine or butter
Procedures:
1Heat griddle to 375°F.
2In small bowl, beat egg on high speed until thick and lemon colored, about 5 minutes.
3Lightly spoon pancake mix into measuring cup; level off.
4Stir in pancake mix, milk, oil and cinnamon.
5Fold in apples and sausage.
6Grease griddle lightly before making each pancake.
7Pour batter from ?cup measuring cup onto hot griddle.
8Bake until bubbles appear, about 2 minutes on each side.
9Serve with hot cider syrup.
10Cider syrup: in medium saucepan, combine sugar, cornstarch and pumpkin pie spice; stir in apple cider and lemon juice.
11Cook, stirring constantly, until mixture thickens and boils for 1 minute.
12Remove from heat and stir in margarine
