Ingredients:
1 lbsBoned, Skinned Chicken
Sliced in Very Thin Strips
1 1/2 tspCornstarch
1 tbspSoy Sauce
1 tbspDry Sherry
1 tspMinced Garlic
1/2 tbspOil
1 tspGingerroot
1/2 cupEach Carrot Strips, Sliced
Celery, Sliced Green Onions
1 canSliced Water Chestnuts
Drained
1 packFrozen Chinese Pea Pods
SAUCE
1/2 cupChicken broth
2 tbspSoy Sauce
1 tbspCornstarch
1 tspSugar
Procedures:
1Mix chicken, cornstarch, soy sauce & sherry.
2In skillet, heat 1 t. oil over high heat.
3Stir in garlic & ginger.
4Add chicken & stir fry until no longer pink.
5Remove.
6In remaining oil, stir fry carrots & celery 1 min. add green onions & stir fry 30 seconds.
7Add water chestnuts & pea pods.
8Stir sauce & add to vegetables.
9Cook, stirring until boiling.
10Return chicken to pan & heat through.
11Sauce: mix ingredients over medium heat in small saucepan.
12Pour over chicken.
