Ingredients:
2 tbspVegetable oil
4 Chicken breast halves
-boned & skinned
Seasoned flour
1 canVEG-ALL Mixed Vegetables
-(16 oz)
1 cupChopped onion
2 cupChicken broth
1 Bay leaf
1 cupPackaged biscuit mix
1/4 cupMilk
1/2 tspThyme
2 tbspChopped parsley
3/4 cupSour cream
2 tspPaprika
Procedures:
1Coat chicken with seasoned flour and saute in oil in heavy skillet over medium heat.
2Add onion; cover and cook five minutes.
3Drain veg-all and reserve vegetables.
4Add liquid to chicken broth.
5Boil, then simmer Add bay leaf to chicken.
6Combine biscuit mix, milk, thyme, parsley and reserved vegetables.
7Drop batter to make 8 dumplings around edge of skillet.
8Cook 10 minutes; then cover and cook 10 minutes longer.
9Place chicken and dumplings on plate.
10Add sour cream and paprika to sauce; serve over chicken and dumplings.
