Chicken in mustard sauce

Ingredients:
FROM JONI'S KITCHEN
6 Chicken breast halves, bone-
Less and trimmed (6 oz each)
1/2 tspSalt
1/2 tspBlack pepper, fresh ground
1 tbspOil, corn, veg, or virgin OLive
1 1/2 cup-water
1 medOnion, chopped one cup
2 tbspFlour
1 tbspDijon mustard
1 1/2 tspDry mustard
1 tbspParsley, fresh , chopped
Procedures:
1Sprinkle chicken with salt and pepper.
2Heat oil in large heavy skillet set over medium-high heat.
3When oil is hot, saute" chicken for 1 ?minutes on each side, until nicely browned.
4Mix in onions and continue cooking mixture for 1 minute.
5Sprinkle flour on chicken pieces, then turn them over in skillet so they are coated with flour on both sides.
6Cook for 1 minute to lightly brown flour.
7Add water and stir well to loosen any solidified juices in bottom of skillet.
8Bring mixture to boil, reduce heat to low, cover and boil gently for 2 minutes.
9Transfer meat to serving platter and keep warm in 180°F oven while you finish the mustard sauce.
10Bring mixture in skillet to boil and add dijon mustard and dry mustard, mixing well with a whisk.
11Return chicken pieces to skillet and heat gently (just under a boil, so the sauce doesn"t separate) for 5 to 6 minutes, or until chicken is heated through.
12Arrange chicken and sauce on platter.
13Sprinkle parsly on top.
14Yield: 6 servings
