Ingredients:

| | Chicken breast halves, bone- | | | Less and trimmed (6 oz each) | | 1/2
| tsp | Salt | | 1/2
| tsp | Black pepper, fresh ground | | 1
| tbsp | Oil, corn, veg, or virgin OLive | | 1 1/2
| cup | -water | | 1
| med | Onion, chopped one cup | | 2
| tbsp | Flour | | 1
| tbsp | Dijon mustard | | 1 1/2
| tsp | Dry mustard | | 1
| tbsp | Parsley, fresh , chopped |

Procedures:
| 1 | Sprinkle chicken with salt and pepper. | | 2 | Heat oil in large heavy skillet set over medium-high heat. | | 3 | When oil is hot, saute" chicken for 1 ?minutes on each side, until nicely browned. | | 4 | Mix in onions and continue cooking mixture for 1 minute. | | 5 | Sprinkle flour on chicken pieces, then turn them over in skillet so they are coated with flour on both sides. | | 6 | Cook for 1 minute to lightly brown flour. | | 7 | Add water and stir well to loosen any solidified juices in bottom of skillet. | | 8 | Bring mixture to boil, reduce heat to low, cover and boil gently for 2 minutes. | | 9 | Transfer meat to serving platter and keep warm in 180°F oven while you finish the mustard sauce. | | 10 | Bring mixture in skillet to boil and add dijon mustard and dry mustard, mixing well with a whisk. | | 11 | Return chicken pieces to skillet and heat gently (just under a boil, so the sauce doesn"t separate) for 5 to 6 minutes, or until chicken is heated through. | | 12 | Arrange chicken and sauce on platter. | | 13 | Sprinkle parsly on top. | | 14 | Yield: 6 servings |
