Ingredients:
4 (4 Oz.) Boneless Skinned
Chicken Breasts
2 tbspFlour
2 tbspFinely Chopped Fresh Sage
1/4 tspGrated Nutmeg
1/8 tspSalt, 1/8 t. Pepper
1 tbspOlive Oil
1/4 cupDry Vermouth
1 medSize Red Bell Pepper
Cut Into Julienne Strips
Fresh Sage Sprigs
Procedures:
1Trim fat from chicken.
2Combine flour, sage, nutmeg, salt & pepper.
3Dredge chicken in this mixture & set aside.
4Heat oil in large skillet over medium-high heat until hot.
5Add chicken; cook 6 to 7 min. on each side or until browned.
6Add vermouth & bell pepper.
7Reduce heat & simmer 5 min. or until chicken is tender.
8Transfer chicken to platter; spoon sauce over chicken & garnish with sage sprigs.
