Soupe aux pois beauceons (pea soup, beauce style)

Ingredients:
2 cupDried white pea beans
2 tbspButter
1/2 cupOnion, chopped
1/4 cupLeek, chopped, white part

1/4 cupSmoked ham, plus ham bone
1/2 lbsSalt pork
1 Garlic clove
8 cupCold water
2 tbspSalted herbs, rinsed in cold

Procedures:
1Servings: 8
2soak peas for at least 8 hours or overnight in water to cover; drain.
3Heat butter in a large, heavy pot and saute onion and leek until tender.
4Add peas, ham, salt pork (in one piece), garlic, water and salted herbs.
5Bring quickly to a boil, lower heat, partly cover, and cook gently for 2 to 3 hours or until peas are tender.
6Stir occasionally during cooking, adding more water if necessary.
7Remove salt pork, cut in small pieces, then return to soup.
8May be frozen.
