Sopa de maiz (filipino corn soup)

Ingredients:
3/4 cupThinly sliced onions
2 Cloves of garlic, minced
1/2 lbsRaw shrimp, shelled
-deveined, and diced
2 cupBottled clam juice
2 cupWater
1/2 tspFreshly ground black pepper
1 1/2 cupChopped, cooked
-or canned corn
1/2 cupShredded watercress
-or spinach
Procedures:
1Saute the onions and garlic in the oil for five minutes.
2Add the shrimp and saute for two minutes.
3Stir in the clam juice, water, pepper, and corn.
4Bring to a boil and cook over low heat for 10 minutes.
5Add the cress and cook two minutes.
6Taste to adjust seasonings and serve.
