Ingredients:

| slice | Bacon, diced, cooked crisp | | | -fat reserved | | 4
| tbsp | (?stick) unsalted butter | | 6
| cup | Peeled, cut up pumpkin, 1" | | | -pieces | | 6
| cup | Beef stock or canned broth | | 1/2
| cup | Marsala | | 1
| tsp | Dried thyme |

Procedures:
| 1 | Salt and freshly ground black pepper to taste heat the bacon fat and butter in a stock pot over medium-high heat. | | 2 | Add the pumpkin and saute" for 15 minutes, stirring occasionally. | | 3 | Pour in the stock and simmer, covered, until the pumpkin is very tender, about 30 minutes. | | 4 | Remove from heat. | | 5 | Add the marsala, thyme, salt, and pepper to taste. | | 6 | Process the soup in batches in a blender until smooth. | | 7 | Return to the stock pot. | | 8 | Add the bacon. | | 9 | Simmer 10 minutes. | | 10 | Serve immediately, garnished with pumpkin seeds. | | 11 | Makes 6 portions. |
