Sitka sound bouillabaisse

Ingredients:
1/4 cupCooking oil
- (half olive oil)
1 cupChopped onions
1 cupChopped green peppers
4 Garlic cloves, minced
1/2 cupChopped parsley, OR...
2 tbsp-dried parsley
2 canTomato sauce (8 oz. cans)
4 Garlic cloves, minced
2 Bay leaves
1 tbspSalt
1/4 tspThyme
1/4 tspMarjoram
1/2 tspTabasco
1 quartWater
1 1/2 cupDry white wine
1 lbsHalibut, 1" pieces
1 lbsShrimp, shelled (raw)
36 Clams, in shells
Crab chunks or abalone
-OR- any available seafood
Procedures:
1In a 4-quart pot saute onions, green pepper and garlic in oil until tender.
2Add tomato sauce, spices and water.
3Simmer covered for 2 hours stirring occasionally.
4Add wine, cook uncovered 10 minutes.
5Add fish and clams and cook until clam shells pop open (approximately 10 minutes).
6Add shrimp, and crab until well heated.
7Avoid stirring as it will break up the fish chunks.
8Serve with garlic bread and a green salad.
