Shaker bean soup

Ingredients:
1 lbsWhite navy beans
Water
1 Ham bone (or 2 ham hocks)
3 Celery stalks, diced
2 Carrots, shredded
1 Lg onion, chopped
Salt to taste
Pepper to taste
1/2 tspThyme, dried
28 ozTomatoes in puree
2 tbspBrown sugar
1 1/2 cupSpinach leaves, finely shred
Procedures:
1Sort and rinse beans.
2Place in soup kettle or dutch oven.
3Cover with water and bring to a boil.
4Boil 2 minutes.
5Remove from heat.
6Let stand 1 hour.
7Drain beans and discard liquid.
8In the same kettle, place ham bone or hocks, 3 quarts of water and beans.
9Bring to a boil; reduce heat and simmer, covered, 1 ?hrs or until meat easily falls from the bone.
10Remove bones from broth and, when cool enough to handle, trim meat.
11Discard bones.
12Add ham, onion, celery, carrots, salt, pepper and thyme.
13Simmer, covered, 1 hour or until beans are tender.
14Add tomatoes and brown sugar.
15Cook for 10 minutes.
16Just before serving, add spinach.
17Yield: 5 quarts
