Sausage, potato, and tomato soup

Ingredients:
1 lbsSausage, sweet or hot
2 largeBaking potatoes cut in 1

1 largeOnion, peeled and sliced
28 ozItalian tomatoes
1 1/2 cupWater
1 tspDried italian seasoning
3 tbspFresh basil minced
Ground pepper to taste
1 cupMozzarella cheese
Procedures:
1Recipe by: denver post in a large pot or dutch oven, place sausage, potatoes, onion and tomatoes.
2Using a sharp knife, roughly cut tomatoes in halves or thirds.
3Add just enough water to almost cover the ingredients with liquid.
4Bring to a boil on high heat.
5Stir in seasoning; cover and lower heat to simmer.
6Simmer until potatoes are cooked and tender when pierced with tip of a knife, about 15 minutes.
7Sprinkle equal amounts of minced fresh basil in each of the 6 soup bowls.
8Cut sausage in 2-inch pieces and ladle portions of sausage and soup into each bowl, making sure that each has some of all the ingredients.
9Sprinkle with shredded cheese and serve.
