San pedro cioppino

Ingredients:
1/4 cupOlive oil
1 medOnion, chopped
1 Garlic clove, minced
1 lbsCanned whole tomatoes
1 tbspJulienned basil leaves
Salt, pepper
1 cupDry white wine
1 lbsFish fillets
- cut into large chunks
1/2 lbsShrimp, shelled & deveined
French bread (optional)
Procedures:
1Heat oil in large saucepan or dutch oven.
2Add onion and garlic and cook until onion is tender.
3Add tomatoes and their juice, basil, 4 cups water and salt and pepper to taste.
4Bring to boil over high heat.
5Reduce heat, cover and simmer 30 minutes, stirring occasionally.
6Add wine, fish fillets and more water, if necessary.
7Return to boil.
8Reduce heat, cover and simmer 5 minutes, stirring occasionally.
9Add shrimp.
10Cover and simmer 5 minutes, or until shrimp turn pink.
11Serve in large bowls with french bread, if desired.
12Makes 4 to 6 servings
