Ingredients:
1 medOnion, coarsely chopped
1 Garlic clove, minced
1 tbspVegetable oil
1 canNo salt added tomatoes
-- (16 oz.), chopped
3/4 cupClear chicken broth
-- (ready to serve
-- with 1/3 less salt)
1 tbspGround cumin
2 Chicken breast halves
8 ozCanned whole green chilies
-- rinsed, drained
-- and coarsely chopped
3 tbspChopped cilantro
2 tbspKikkoman Lite Soy Sauce
Procedures:
1Saute onion and garlic in hot oil in large saucepan or dutch oven until soft.
2Stir in next 3 ingredients.
3Arrange chicken, skin side down, in liquid.
4Cover and simmer 35 minutes, or until chicken is tender.
5Remove pan fro heat.
6Remove chicken; cool.
7Shred chicken, discarding skin and bones.
8Return chicken to pan; stir in remaining 3 ingredients.
9Heat to serving temperature.
