Ingredients:
| 1
| can | (28oz) plum tomatoes | | 1
| | Spanish onion, finely | | | Chopped | | 1
| tbsp | Olive oil | | | Salt and pepper | | 1
| | Stalk fresh basil | | 2
| | Garlic cloves, minced | | 1 1/2
| cup | Cold water (or more) | | 1/2
| tbsp | Granulated sugar |

Procedures:
| 1 | Drain tomatoes and dice. | | 2 | Reserve juice. | | 3 | Add onion to hot oil, season with salt and pepper. | | 4 | Cook over low heat until translucent and slightly browned. | | 5 | Add chopped basil leaves and garlic, cook 1 minute. | | 6 | Stir in diced tomatoes and their juice then 1 ?cups of water and the sugar. | | 7 | Add more water if needed. | | 8 | Simmer uncovered 10 minutes or until soup thickens |
