Pasta with grilled pork, scallions and cucumber

Ingredients:
1 lbsMostaccioli or Ziti
-OR other medium pasta
-shape, uncooked
1 lbsPork loin, trimmed of fat
- cut into ?inch pieces
1 largeCucumber, sliced
1 bn Scallions, trimmed
SAUCE
1/4 cupLight soy sauce
2/3 cupOrange marmalade
1/2 cupChopped fresh mint
Procedures:
1Prepare pasta according to package directions; drain.
2Thread the pork and cucumbers onto separate skewers.
3In a large mixing bowl, stir together all the ingredients for the sauce.
4Over medium-hot coals, grill the pork until firm (about 8-10 minutes) and the cucumber until tender and nicely browned (about 6 minutes).
5Slide the pork and cucumbers off the skewers and toss in a large bowl with the sauce.
6Grill the scallions until wilted, about 3 minutes.
7Cut scallions into 1-inch lengths and toss with pork mixture.
8Toss in the pasta, garnish with mint leaves and serve.
