Ingredients:
1 lbsCooked corned beef
-brisket, trimmed
1/2 cupSauerkraut
1 Stick butter
1/2 cupFlour
3 cupCream
2 cupMilk
1 cupDiced white onions
1 1/2 cupGrated Swiss cheese
1/2 tspWhite pepper
3/4 tspGarlic salt
3/4 tspOnion powder
3/4 tspCelery salt
3/4 tspLemon pepper
1/2 tspSalt
Procedures:
1Dice or shred corned beef.
2Combine corned beef with sauerkraut and set aside.
3Melt butter in large soup pot over low heat.
4Add flour and heat 3-5 minutes, stirring constantly to cook flour and make a roux.
5Stir in cream and milk.
6Add onions.
7Increase heat to medium and continue cooking 7-10 minutes, stirring constantly, until soup thickens.
8Add cheese and stir to blend.
9Add white pepper, garlic salt, onion powder, celery salt, lemon pepper and salt.
10Add corned beef and sauerkraut.
11Stir until well-combined.
12Makes about 2 quarts, serving 4-6 people.
