Ingredients:
1 largeOnion, chopped
4 eachCelery ribs, chopped
2 tbspVegetable oil
1 smallHead broccoli
-- cut into florets
1 smallHead cauliflower
-- cut into florets
3 largePotatoes, cubed
2 largeCarrots, finely chopped
1 medZucchini, diced
1 medYellow squash, diced
28 ozCan tomatoes & juice, diced
1/2 cupFrozen lima beans
1/2 cupFrozen green beans
1/2 cupFrozen corn
1/2 cupFrozen peas
2 quartWater
1/4 cupSpike seasoning*
1/2 tspGarlic flakes**
1 tspBasil
1/4 tspThyme
1 tspCumin
1 tspChili powder
1/4 tspOregano
1 tspParsley flakes
1 tbspSweetener
3 tbspTamari sauce
Procedures:
1*a blended seasoning mixture.
2**my note: blech! use the real stuff! in a large kettle, saute onion and celery in oil until onions are translucent.
3Add broccoli, cauliflower, potatoes, carrots, zucchini, squash, tomatoes and juice, lima beans, green beans, corn, peas and water.
4(if you prefer a thinner soup, more water can be added).
5Stir well.
6Add spike, garlic flakes, basil, thyme, cumin, chili powder, oregano, parsley flakes, honey and tamari or soy sauce.
7Simmer 1 hour or until vegetables are tender.
8Yield: 8 to 10 servings.
