Ingredients:
2 lbsLean Ground Beef
1/2 cupOnion, Chopped, 1 Md
1 cupCelery, Sliced
2 1/2 cupApple, Pared, Coarsely Chopped
1 xCurry Powder, To Taste, 2-3ts
2 tbspUnbleached Flour
2 tspBeef Bouillon, Instant
1 cupWater
4 ozMushroom Stems & Pieces, *
2 tbspSherry, Optional
2 ea Bananas, Peeled And Sliced
4 cupRice, Hot, Cooked
Procedures:
1* use 1 4-oz can of mushroom stems and pieces that has been drained.
2Cook and stir the meat and onion in a large skillet until the onion is tender and the meat is browned.
3Drain off the excess fat.
4Stir in the celery, apple, and curry powder and cook, uncovered, for about 5 minutes, stirring occasionally.
5Stir in the remaining ingredients except the bananas and rice and heat to boiling.
6Reduce the heat and simmer, uncovered about 30 minutes, stirring occasionally.
7Stir in the bananas then recover and cook over low heat for 5 minutes.
8Serve over the rice.
9If you wish you can garnish the dish with crisply fried bacon or chopped peanuts when you serve it.
10note:
11you can substitute 1 13 ?oz can of pineapple chunks, that has been drained, for the sliced bananas.
