Rhubarb pilaf

Ingredients:
1 cupUncooked bulgur
1/2 cupChopped onions
1 tbspOil
1 eachMinced garlic clove
2 1/2 cupChopped rhubarb
7 eachDried apricots, chopped
1/4 cupApple juice
1 tspCinnamon
1 pinchCayenne
3 tbspBrown rice syrup
1/2 tspTamari
1/4 cupSlivered almonds
Fresh sprigs mint for
-- garnish
Procedures:
1Place bulgur in a medium sized saucepan or mixing bowl & add 2 ?c boiled water.
2Cover & set aside to steep for 30 minutes.
3In a large skillet, saute the onions in oil until translucent.
4Stir in the garlic & rhubarb & saute for 1 minute.
5Add apricots, juice, cinnamon & cayenne.
6Cover & cook over medium heat until bubbly.
7Add syrup & tamari.
8Stir in the bulgur.
9Garnish with slivered almonds & fresh sprigs of mint.
10Serve warm.
